Ingredients of Parveen’s Vegan Curry Pasta Salad:

  • Elbow Pasta made from Chickpeas 8 ounce package
  • 1 Onion medium size
  • 4 Mini-sweet bell peppers Organic
  • 1 large jalapeño pepper
  • 1 tablespoon Fresh Ginger about
  • handful Cilantro
  • Madras Curry Powder Swad brand
  • Original Vegenaise Follow Your Heart Brand
  • Salt and Pepper

Method for "Parveen’s Vegan Curry Pasta Salad":

  1. Prepare chickpea pasta as directed. Bring water to boil. Add pasta, bring to medium heat, cook 8-10 minutes. Strain, rinse with cold water.
  2. Chop onion, peppers, jalapeño, fresh ginger cilantro.
  3. Add to pasta.
  4. Mix madras Curry powder, about 3 tablespoons to cup of Vegenaise or more to taste in a cup or bowl.
  5. Mix in the Vegenaise with the curry powder into the salad.
  6. Salt and pepper to taste.
  7. Serve cold and Enjoy!
  8. Refrigerate.
