Reuben Biscuit Sandwiches

Ingredients of Reuben Biscuit Sandwiches:

  • For biscuits:
  • 4 oz full-featured cream cheese
  • 1 lage egg
  • 1 ts caraway seeds
  • 1/2 tsp Italian seasoning
  • 1/2 tsp onion powder
  • 2 cloves garlic, minced
  • 1-1/2 c almond flour
  • 1 c shredded Swiss cheese
  • 1/4 c heavy cream
  • 1/4 c water
  • Other ingredients:
  • 10 slices deli corned beef, warmed
  • 5 slices Swiss cheese
  • 1 c sauerkraut
  • 1/3 c Thousand Island dressing

Method for "Reuben Biscuit Sandwiches":

  1. To make biscuits:
  2. Preheat oven to 350°. Line baking sheet with parchment paper or silicone baking mat.
  3. In mixing bowl, beat cream cheese and egg until well combined.
  4. Add remaining biscuit ingredients and mix until well combined.
  5. Using a large spoon, drop dough in 5 heaping mounds onto baking sheet. Bake 25 min. or until golden brown.
  6. Let biscuits cool completely on baking sheet before handling. Carefully slice biscuits in half.
  7. Assembly:
  8. Layer bottom halves of biscuits with 2 slices of beef, 1 slice cheese, heaping spoonful of sauerkraut, 1 T of dressing and top biscuit halves.
